APPELLATION

COMPOSITION
100% Merlot

HARVEST
The grapes were hand-harvested into 450 kg. bins in March 2010. They were then destemmed and pressed and 5g/hl sulphites and 1 g/hl enzymes were added.

WINEMAKING
The must was fermented with selected yeasts in stainless steel tanks at 26°C to 28°C for a period of 6 to 8 days.

It was then macerated with the skins and seeds for a short period, determined by tasting. Then the must was drained and put through a pneumatic press to remove the skins and seeds. Is was then subjected to malolactic fermentation and sulphites were added. Open racking took place every two to three months. Finally, the wine underwent static cold tartaric stabilization and filtration.

TASTING NOTES
Ruby red colour with aromas of classic fresh fruits. It is light in texture with fresh and tasteful mouth feel and good persistence. Very fruity aroma with varietal notes of plums on a smooth oak background. Gentle tannins with medium structure provide a pleasant after taste.

MERLOT RESERVA 2009

COMPOSITION
100% Merlot

HARVEST
The grapes were 100% hand-harvested in 13 kg. cases from mid-to-late-March 2009.

WINEMAKING
The process began with gravitational processing and cluster selection. The grapes were then subjected to a pre-fermentative cold maceration for 72 hours, followed by fermentation at between 28°C and 30°C for a period of 6 days.This was followed by a post-fermentative maceration for 3 to 5 days. During the winemaking process, a variety of French and American oak with different level of toasting was used to give complexity to the fruit.

The wine underwent static cold tartaric stabilization, earth and pad filtration, after which it was bottled.

TASTING NOTES
Our Merlot Reserva is a fresh, bright cherry red wine. The nose is complex, with a harmonious blend of fresh herbs, vanilla and fruit, supported by notes of French and American oak.

The entrance to the palate is gentle and balanced, bringing notes of spices and ripe cherries. A well balanced and medium-bodied wine, with good persistence in its aromatic profile and pleasant vanilla notes supported by a creamy mouth feel.

MERLOT GRAND RESERVA 2008

COMPOSITION
100% Merlot

HARVEST
Manual harvest in 13 kg. boxes at the end of March 2008.

WINEMAKING
Gravitational processing with selection of bunches.

Cold pre-fermentative maceration for 72 hours. Fermentation between 28°C and 30°C for 6 to 8 days followed by a brief period of maceration according to taste. After the winemaking process it was stored in French and American oak barrels for 12 months. After this period it was mixed in proportion with young wine in order to bring out its fruitiness.

Rough filtering and bottling. Its bottle storage gives it complexity and roundness.
