APPELLATION

COMPOSITION
100% Carménère

HARVEST
The grapes were harvested into 450 kg. bins in April 2010. They were then destemmed and pressed and 5g/hl sulphites and 1 g/hl enzymes were added.

WINEMAKING
The must was fermented with selected yeasts in stainless steel tanks at 26°C to 28°C for a period of 6 t 8 days. It was then macerated with the skins and seeds for a short period, determined by tasting. Then the must was drained and put through a pneumatic press to remove the skins and seeds. It was then subjected to malolactic fermentation and sulphites were added. Open racking took place every two to three months. Finally the wine underwent static cold tartaric stabilization and filtration.

TASTING NOTES
This is a young wine, ruby-red with blue hues. Subtle notes of oak complete the fruity and herbaceous aromas typical of the variety. This wine is gentle in the mouth, medium-bodied and has a balanced finish.

CARMÉNÈRE RESERVA 2009

HARVEST
The grapes were hand-harvested into 13 kg. bins between late April and early May 2009.

WINEMAKING
The process began with gravitational processing and cluster selection.

The grapes were then subjected to pre-fermentative, cold maceration for 72 hours, followed by fermentation at between 28°C and 30°C for a period of 6. Then came post-fermentative maceration for 3 to 5 days. During the winemaking process, a variety of French and American oak with different levels of toasting was used to give complexity to the fruit.
The wine underwent static cold tartaric stabilization and earth and pad filtration and was then bottled.

TASTING NOTES
Our Carménère Reserva has an intense red colour, deep and bright with bluish hues. The bouquet reveals ripe red fruit with subtle notes of caramel and candy.

In the mouth, it is soft and well balanced. An elegant contribution from the wood gives complexity and structure to the wine. The aftertaste is long and features notes of syrup and ripe fruit.

CARMENERE GRAN RESERVA 2008

HARVEST
The grapes were 100% hand-harvested into 13 kg. bins in late April 2008.

WINEMAKING
Once received at the winery, the clusters were selected and then gently pressed without solid pumping. They were then subjected to a pre-fermentatitive maceration for 72 hours at between 10°C and 12°C. Next fermentation took place at between 26°C and 28°C for 8 days, after which, the wine was tasted to determine whether there was a need for post-fermentative maceration. Once the vinification process was complete, the wine was put into French and American oak barrels for a period of 12 months. After the final blend was made, it was coarsely filtered and then bottled.

TASTING NOTES
Ripe black fruit with hints of cherry and cocoa coupled with round tannin and a pleasant acidity. Pleasant aromas of spice and tobacco on the nose. Excellent with beef and braised meats.
